I am replacing parts of broken particle board underlayment. Before I do so, should I remove baseboards first or keep them? Does it even matter?

We have particle board as an underlayment all over the house. Our particle board in the kitchen got damaged due to a leak. Can I replace the affected area with OSB? (We have an open space, so OSB will be coming in to contact with particle board in the sofa area)
